Bánh canh is thick Vietnamese noodle that looks quite like Japanese udon which has the thickness of a chopstick, more or less. The Vietnamese word bánh refers to items such as noodles or cakes that are made from flour, and canh means “soup”.

In some countries you can buy dried or precooked banh canh noodle at the Asian store. If you can”t find it, you can use Japanese Udon as a substitute.Banh canh is apparently the most versatile dish among all Vietnamese noodle soup dishes. The soup base (broth) can be cooked from pork, crab, fish, and the toppings can be with fish cake, mushroom, Vietnamese ham, shimp balls, etc. Video: Making the noodleMETHOD 1 In a mixing bowl, mix all below ingredients and knead well into soft non-sticky dough 1 cup rice flour 1 cup tapioca starch 1 cup boiling hot water ½ tsp salt Cover and let the dough rest for abt 30 mins to reduce the strong flour smell. Sprinkle some flour on the working surface and then using the rolling pin roll the dough flat, abt ¼ inch (0.5cm) thick. Cut into strips, abt 3-inch long The noodle for Banh canh can be made from rice flour, tapioca flour, sometimes wheat flour, or a mixture of those. The recipe is flexible. You can adjust the ratio to your preference: Use more tapioca flour if you like chewy noodle, use less if you want it softer. I personally prefer the second method because it is easier, and the noodle is softer. METHOD 2 In a mixing bowl, mix all below ingredients until well dissolved 1 cup rice flour 1 ½ cup water 1 tbsp vegetable oil ½ tsp salt Then microwave for 2 mins 30 secs until the mixture is half-cooked and still a little liquidy. Then mix with 1 cup tapioca starch until well-combined. Transfer the flour mixture into a potato ricer. Press gradually and continuously to release the noodle into a pot of boiling water. If you don’t have a potato ricer, you can use a piping bag or a thịck plastic bag and cut off a small hole at the tip and press to release. When the noodle float to the surface, transfer to a bowl of cold water and then drain.Making coloring oil from annatto seedHeat ½ cup oil and add annatto seeds and fry for 30 seconds or until the oil turns into a light red color. Set aside for 15 mins.Fry chopped garlic and shallot in a pan/ wok until fragrant, add crab meat and prawns and stir fry until the cooked. Set aside.

Stir fry crab chunks in a pot and add pork/chicken stock (or water). Bring to boil and season to taste with seasoning powder, salt, fish sauce etc. You can either add the home-made noodle directly into the stock or boil and drain it first.Transfer into serving bowl. Top up with stir-fried crab meat, prawn, coloring oil, garnish with chopped spring onion or Vietnamese mint rau ram.Banh canh is served simply with a spoon and fried bread sticks.

Cách làm sợi bánh canhCách 1:Trộn 1 chén bột gạo, 1 chén bột năng, ½ mcf muối với 1 chén nước sôi. Trộn đều, để hơi nguội 1 tí rồi nhồi thành cục bột dẻo mịn.Đậy lại để bột nghỉ 30 phút để giảm bớt mùi nồng.Lót mặt bàn chút bột áo rồi cán bột thành miếng dày 0,5cm.Sau đó xắt bột thành sợi dài cỡ ngón tay, độ dày xấp xỉ chiếc đũa.Tùy theo muốn ăn sợi bánh dai hay mềm mà điều chỉnh lại tỉ lệ. Nhớ cho chút dầu vào nồi nước sôi cho đỡ dính.Sợi bánh canh khi chín sẽ nổi lên bề mặt. Vớt ra tô nước lạnh hoặc trút ra rỗ rồi xả lại nước lạnhCó thể luộc riêng như vậy hoặc ép bột luôn vô nồi nước súp đều được.Làm dầu màu điềuĐun nóng 1/2 chén dầu ăn, hạ lửa nhỏ rồi cho 1-2m hạt điều vào đun 30 giây rồi đổ ra chén.Bánh canh chả cáNguyên liệu: xương heo, chả cá, hành ngỏ, rau rămNấu nước dùng:Luộc sơ xương 5 phút cho ra bớt chất bẩn.Rửa xương, cho qua nồi sạch, thêm nước, hành tây, muối, đun 1 giờ. Vớt bọt, bỏ hành tây. Nêm lại với bột nêm, mắm, muối.Cho sợi bánh canh vào nấu mềm, thêm chả cá và dầu màu.Cho ra bát, thêm hành ngò/ rau răm.

Bánh canh cuaNguyên liệu: cua chặt miếng vừa ăn, thịt cua, tôm, nước dùng (xem cách nấu ở phần bánh canh chả cá), hành tỏi băm, hành ngò rau răm.Cách làmƯớp tôm cua với mắm, muối, tiêu. Để 15 phút cho thấm.Phi thơm hành tỏi, cho tôm và thịt cua vào xào. Cho chút màu điều cho có màu đỏ đẹp. Múc ra để riêng.Cho dầu vào nồi lớn, cho cua nguyên miếng vào um, xóc đều. Cho nước dùng vào nấu sôi, thêm hành tây, nêm nếm lại với bột nêm, mắm, muối.Cho sợi bánh canh (làm theo cách 2) vào nấu mềm. Múc ra tô cho thịt tôm cua xào lên. Rắc tiêu, rau răm hành ngò. Ăn với bánh quẩy nóng siêu ngon.
